Chicken contains haem iron, which makes it more bioavailable than other green leafy vegetable-based iron sources like spinach, bok choy, kai-lan, and amaranth. Non-haem iron, which is a plant-based source of iron, has a lower bioavailability. It should be paired with something rich in Vitamin C to increase our body’s absorption.
